Spicy Watermelon, Lime & Tequila Slushy

At last, we’ve found something to do with leftover watermelon. It’s a blended margarita-like cocktail made with fresh watermelon and lime juice instead of a bottle of mix.


We freeze chunks of watermelon on a parchment-lined baking sheet in a single layer, so that they don’t form giant, unworkable icebergs. And then we whirl them up with simple syrup, tequila, lime and a small amount of jalapeño pepper. The result is a slushy that looks an awful lot like a Misty, but tastes ever so much more sophisticated — it’s fruity sweet and delightfully tart with a lightly spicy jalapeño finish.


Where is that tequila? It’s in there, adding to the heat, but you’d never know it. Blanco tequila is sly like that — you’ve been warned!

So instead, I like to cook something special for my husband and I for weekend brunch. What better way to make up for our boring weekday breakfasts than with a fun brunch?

Ingredients

  • cups watermelon pieces, frozen; plus wedges for serving
  • 6
    ounces tequila blanco
  • 4
    ounces simple syrup
  • 2
    ounces fresh lime juice
  • 1 ½
    -inch thick jalapeño slice with seeds; plus sliced jalapeño for serving
  • 3
    cups ice

Directions

    Purée watermelon, tequila, simple syrup, lime juice, jalapeño slices and 3 cups of ice in a blender until smooth and very thick (mixture will loosen immediately once poured).

    Divide among glasses and garnish with watermelon wedges and jalapeño slices.
