Mango Habanero Wings

Ingredients

    small mango, peeled and chopped into large chunks
  • 2
    tablespoons habanero or chili powder
  • 4
    tablespoons apple cider vinegar
  • 1/2
    cup barbecue sauce
  • 1/2
    tablespoon garlic powder
  • 6-8
    bone-in skin-on chicken thighs
  • Sliced green onion, for garnish
  • Fresh cilantro, for garnish

Directions

    In a blender or food processor, combine mango, habanero, apple cider vinegar, barbecue sauce and garlic powder until a smooth sauce forms.

    Transfer the chicken wings to a large bowl and generously cover with the mango habanero sauce and toss to coat.

    Cover the chicken wings with cling wrap and allow to marinate for a minimum of two hours, or up to overnight, in the fridge.

    Once the wings have marinated, remove the from the fridge and heat the oven to 400 F.

    Cover a large baking sheet in foil and brush with a bit of oil. Transfer the wings to the prepared baking sheet.

    Brush the wings with the additional marinade and bake for 25-30 minutes or until caramelized and bronw.

    Transfer the finished wings to a serving tray and garnish with green onions and cilantro.

    Leftover wings can be stored in an airtight container in the fridge for up to 4 days.
