Mediterranean Crispy Tortellini Salad

Good salads are one of life’s great pleasures, and this one is no exception. Using air-fried tortellini instead of traditional croutons makes our Mediterranean Crispy Tortellini Salad extra-substantial (and a little cheesier) for dinners, cookouts or as an appetizer. Kalamata olives and cucumbers add flavor and freshness for a summer-inspired dish that you’re bound to love. Try this recipe when you want something fresh and fun!

Ingredients

1(20 oz.) package tortellini pasta

1tablespoon extra virgin olive oil

1head romaine lettuce, roughly chopped

1(10 oz.) package mozzarella pearls

½cup L&B Caesar Dressing

½cup grated Parmesan cheese
-
⅓cup seeded, small-diced cucumbers

¼cup small-diced red onion
-
¼cup rough-chopped kalamata olives
-
¼cup L&B Julienne-Cut Sun Dried Tomatoes

½teaspoon freshly ground black pepper

Balsamic glaze, for drizzling

Heat an air fryer to 400 F. In a small bowl, toss the tortellini and olive oil until well coated, then transfer the pasta to the air fryer basket.

Air fry for 7 minutes, toss, and air fry for 3 minutes more, or until the tortellini are golden brown and crispy. Set aside.

In a large bowl, combine the lettuce, mozzarella, L&B Caesar Dressing, Parmesan, cucumbers, onion, olives, L&B Julienne-Cut Sun Dried Tomatoes and pepper; toss to combine. Add the pasta and toss again to combine.

Garnish with more dressing, Parmesan and balsamic glaze. Serve warm.
