Dill Pickle Arnie Palmer

Very few things are more summery than an ice cold Arnie Palmer…except an ice cold glass of Pickle Arnie Palmer! Our pickle simple syrup pairs beautifully with the sweet lemonade and earthy black tea that are staples of the traditional drink. With a few added electrolytes and a light dill flavor, this easy summer drink is bound to become a staple in your fridge.

Ingredients
For the pickle simple syrup:

½cup pickle brine, plus more for rimming glasses

½cup granulated sugar
For the Arnie Palmer:

5black tea bags
-
2cups crushed ice, plus more for individual glasses

½cup freshly squeezed lemon juice, plus 1 wedge for garnish

¾cup pickle simple syrup

4dill pickle spears

2tablespoons Tajín

To make the pickle syrup: In a small saucepan, combine ½ cup water, the pickle brine and sugar and bring to a boil over medium-high heat. Stir until the sugar has dissolved, 3 to 4 minutes. Remove the pot from the heat and let cool for 10 minutes.

To make the Arnie Palmer: In a heatproof medium pitcher, steep the black tea bags in 2 cups of boiling water and brew for 5 minutes. Remove tea bags and let cool.

Add ice, lemon juice, 1 cup water and the pickle simple syrup. Taste and adjust the sweetness by adding 1 tablespoon more of pickle syrup at a time.

To serve: Rotate the rim of each glass through pickle brine on a shallow plate and then rotate through Tajín on another plate until all 4 glasses are garnished. Fill all glasses to the top with ice, top with the Arnie Palmer, garnish with a pickle spear and enjoy!
