It’s packed with nearly everything we love about breakfast in one recipe. The L&B Hickory Smoked Bourbon Bacon speaks for itself. Then, maple syrup and brown sugar come in with their signature sultry sweetness, the brewed coffee adds a rich, robust flavor, and the cayenne shows up with an extra little wake-up call at the end. We put it on top of a burger, which is amazing. But it’s also great on deli sandwiches in the afternoon, eggs in the morning, crackers and goat cheese in the cocktail hour… the applications are endless!

Ingredients

12ounces L&B Hickory Smoked Bourbon Bacon, medium diced

2tablespoons unsalted butter

1large sweet onion, small diced

2medium shallots, small diced

3garlic cloves, minced

¾cup apple cider vinegar

¼cup maple syrup

¼cup packed brown sugar
-
¼cup brewed coffee, cooled

Pinch cayenne pepper

Freshly ground black pepper, to taste

Kosher salt, to taste

In a medium pot, add the diced bacon and sauté over medium heat until crispy, about 10 minutes. Transfer the bacon to a paper towel-lined plate. Discard all but 1 tablespoon of the bacon fat.

Add the butter, onion, shallot, and garlic and cook until the butter melts and the onions are softened, about 5 minutes.

Stir in the apple cider vinegar, maple syrup, brown sugar, coffee, and a pinch of cayenne pepper. Bring to a simmer.

Add the bacon and simmer, stirring occasionally, for 1 hour until the jam is deep golden and coats the back of a spoon. Season with salt and black pepper.

Serve immediately or transfer to an airtight container. Leftover bacon jam can be stored in the refrigerator for up to 5 days.
