Herb Grilled Salmon

Ingredients

  • 2
    6-ounce salmon fillets
  • Sea salt, to taste
  • Heirloom tomatoes, sliced, for serving
  • Maldon Sea Salt, for serving
  • Olive oil, for serving
  • Fresh dill, for serving
  • Freshly cracked black pepper, for serving

For the herb mayonnaise:

  • 1/4
    cup good quality mayonnaise
  • 1
    teaspoon lemon juice
  • 1
    garlic clove, finely minced
  • 1
    tablespoon freshly chopped dill
  • Freshly cracked black pepper, to taste

Directions

    Make the herb mayonnaise: Combine mayonnaise, lemon juice, garlic, freshly chopped dill and black pepper. Set aside.

    Season salmon fillets with desired amount of salt.

    Lightly brush the herb mayonnaise on both sides of the fillets and set aside.

    Heat grill to medium-high heat.

    Grill the salmon for 3-4 minutes, rotate 90 degrees and continue to cook for 3-4 minutes on each side.

    Flip the salmon. Continue to grill until you have reached the desired doneness, approximately 3-4 more minutes. Remove from the grill.

    Just before serving, slice heirloom tomatoes and lightly season with Maldon Sea Salt and freshly cracked black pepper. Drizzle with olive oil and garnish with freshly chopped dill. Serve alongside the salmon.
