Loaded Smoked Salmon Salad

We’re just gonna come out and say it: This salad is a delight. It’s the definition of a salad that’ll fill you up (thanks to creamy avocado and flaky salmon) without weighing you down (all those fresh greens, bright tomatoes and crunchy cucumbers). Tangy chèvre crumbles and sunflower seeds add layers of texture, and the dressing is a real treat — zingy and sweet in equal measure.


Our Loaded Smoked Salmon Salad is hearty enough for a keep-you-going-strong-all-afternoon-long lunch or standalone dinner, and while it’s especially fresh and tasty in summer, like all salads, it has a Goldilocks quality that other salads lack. It’s sturdy enough to be a standout in any season.

Ingredients

    ounces mixed greens
  • ½
    medium red onion, thinly sliced
  • 3
    mini cucumbers, cut in ½” rounds
  • 1
    cup cherry tomatoes, halved
  • 1
    cup L&B Smokehouse Cider Dressing
  • 8
    ounces L&B Original Smoked Atlantic Salmon, gently broken into 2” pieces
  • 2
    avocados, thinly sliced
  • ½
    cup crumbled chèvre
  • cup roasted salted sunflower seeds
  • Fresh dill fronds, for garnish
  • Zest of 1 lemon, for garnish

Directions

    In a large serving bowl, combine the mixed greens, onions, cucumbers and tomatoes.

    Drizzle the dressing over the top, and toss gently to combine.

    Top the salad with smoked salmon, avocado slices, chèvre and sunflower seeds. Garnish with the dill fronds and lemon zest. Enjoy!
