Mediterranean Crispy Tortellini Salad

Good salads are one of life’s great pleasures, and this one is no exception. Using air-fried tortellini instead of traditional croutons makes our Mediterranean Crispy Tortellini Salad extra-substantial (and a little cheesier) for dinners, cookouts or as an appetizer. Ingredients

    (20 oz.) package tortellini pasta
  • 1
    tablespoon extra virgin olive oil
  • 1
    head romaine lettuce, roughly chopped
  • 1
    (10 oz.) package mozzarella pearls
  • ½
    cup L&B Caesar Dressing
  • ½
    cup grated Parmesan cheese
  • cup seeded, small-diced cucumbers
  • ¼
    cup small-diced red onion
  • ¼
    cup rough-chopped kalamata olives
  • ¼
    cup L&B Julienne-Cut Sun Dried Tomatoes
  • ½
    teaspoon freshly ground black pepper
  • Balsamic glaze, for drizzling

Directions

    Heat an air fryer to 400 F. In a small bowl, toss the tortellini and olive oil until well coated, then transfer the pasta to the air fryer basket.

    Air fry for 7 minutes, toss, and air fry for 3 minutes more, or until the tortellini are golden brown and crispy. Set aside.

    In a large bowl, combine the lettuce, mozzarella, L&B Caesar Dressing, Parmesan, cucumbers, onion, olives, L&B Julienne-Cut Sun Dried Tomatoes and pepper; toss to combine. Add the pasta and toss again to combine.

    Garnish with more dressing, Parmesan and balsamic glaze. Serve warm.
