Mediterranean Tuna Toasty

A creative take on an old favorite, pairing heart-healthy tuna with briny Kalamata olives, peppery arugula and garlicky hummus.

Ingredients

    can Wild Planet Albacore Tuna (packed in olive oil)
  • 1
    tablespoon minced parsley
  • 2
    tablespoons Follow Your Heart Vegenaise (or mayonnaise of choice)
  • 1/4
    cup thinly sliced red onion
  • 1/4
    cup pitted and chopped Kalamata olives
  • 1/2
    cup canned cannellini beans, drained and rinsed
  • 3/4
    cup arugula
  • 1 1/2
    tablespoons extra virgin olive oil
  • 2
    teaspoons fresh squeezed lemon juice
  • 1/4
    cup garlic hummus
  • 3
    1/4-inch slices L&B Artisan Six Seed Bread, toasted
  • Cracked pepper, for serving

Directions

    Lightly drain tuna; do not press out all excess liquid.

    Combine tuna, parsley, Vegenaise, red onion and olives. Stir with a fork to break up the tuna, then add beans and gently combine.

    Toss arugula with olive oil and lemon juice.

    Spread hummus on toasted bread. Top each piece of toast with 3 tablespoons of the tuna mixture and ΒΌ cup of the arugula mixture. Sprinkle with cracked pepper to serve.
