Mediterranean Tuna Toasty

A creative take on an old favorite, pairing heart-healthy tuna with briny Kalamata olives, peppery arugula and garlicky hummus.

Ingredients

1can Wild Planet Albacore Tuna (packed in olive oil)

1tablespoon minced parsley

2tablespoons Follow Your Heart Vegenaise (or mayonnaise of choice)

1/4cup thinly sliced red onion

1/4cup pitted and chopped Kalamata olives
-
1/2cup canned cannellini beans, drained and rinsed

3/4cup arugula
-
1 1/2tablespoons extra virgin olive oil

2teaspoons fresh squeezed lemon juice

1/4cup garlic hummus
-
31/4-inch slices L&B Artisan Six Seed Bread, toasted

Cracked pepper, for serving

Lightly drain tuna; do not press out all excess liquid.

Combine tuna, parsley, Vegenaise, red onion and olives. Stir with a fork to break up the tuna, then add beans and gently combine.

Toss arugula with olive oil and lemon juice.

Spread hummus on toasted bread. Top each piece of toast with 3 tablespoons of the tuna mixture and ΒΌ cup of the arugula mixture. Sprinkle with cracked pepper to serve.
