Grilled Peach & Chicken Skewers

Sweet, smoky and packed with summer flavor, these grilled skewers combine juicy white peaches with tender chicken for an easy meal that’s perfect for backyard barbecues or weeknight dinners. As the peaches caramelize on the grill, their natural sweetness pairs beautifully with the savory chicken for a fresh take on a classic summer favorite.

Ingredients

2pounds boneless, skinless chicken breasts, cubed

2firm white peaches, cut into wedges

1red bell pepper, chopped

1green bell pepper, chopped

1red onion, cut into chunks

Wooden or metal skewers
For the Marinade:

1/3cup olive oil

3tablespoons fresh lemon juice

1tablespoon soy sauce

2tablespoons honey
-
3garlic cloves, minced

1teaspoon kosher salt

1/2teaspoon black pepper

1teaspoon smoked paprika
-
1teaspoon dried thyme
-
1/2teaspoon dried oregano

Pinch red pepper flakes
For the Glaze:

2tablespoons peach preserves

1tablespoon honey

1teaspoon fresh lemon juice

Whisk together all of the marinade ingredients until well combined.

Cut the chicken into 1-inch cubes and toss in the marinade until evenly coated.

Cover and refrigerate for 1–6 hours.

Thread the ingredients onto skewers, alternating chicken, red onion, green bell pepper, white peach, and red bell pepper. Repeat until the skewers are full.

Heat the grill to 400 F.

Grill the skewers for 12–15 minutes, turning every few minutes, until the chicken reaches an internal temperature of 165°F and the peaches are lightly caramelized.

In a small saucepan, warm the peach preserves, honey, and lemon juice until smooth.

Brush the glaze over the skewers during the last few minutes of grilling, then add one final brush of glaze just before serving.
