Prosciutto-Wrapped Asparagus

It’s asparagus season, and that means it’s time for one of our favorite side dishes: Prosciutto-Wrapped Asparagus. This impressive dish comes together quickly with just a handful of ingredients. Delicious served with a glass of your favorite white wine.

Ingredients

    thick asparagus spears, ends trimmed, lower half peeled
  • 8
    slices prosciutto
  • 8
    fresh basil leaves
  • Parmesan cheese, shaved
  • Balsamic vinegar
  • Extra virgin olive oil
  • Freshly ground black pepper

Directions

    Blanch asparagus in boiling salted water for 3 minutes. Immediately drain and plunge into bowl of ice water. Let sit 10 minutes; remove and dry on paper towels.

    Wrap a basil leaf around each asparagus spear. Wrap prosciutto slice around bottom two-thirds of each asparagus spear. Arrange on serving platter.

    Garnish with Parmesan shavings and fresh ground black pepper. Drizzle with balsamic vinegar and olive oil.
