    Persian cucumbers, thinly sliced on a bias
  • ½
    cup thinly sliced red onion
  • ¼
    cup finely chopped dill fronds
  • 2
    serrano peppers, thinly sliced
  • ½
    cup packed mint leaves, finely chopped
  • 1
    tablespoon fish sauce
  • 1
    tablespoon sesame oil
  • 1
    tablespoon rice wine vinegar
  • 1
    tablespoon soy sauce
  • 12
    ounces cream cheese, softened to room temperature
  • 1
    cup whole fat Greek yogurt
  • 1
    package (2 sheets) L&B Traditional Lefse
  • 1
    pound L&B Smoked Atlantic Salmon Sliced Nova Lox
  • Chili crisp, for serving

Directions

    In a large bowl, combine the cucumbers, onion, dill, serrano, mint, fish sauce, sesame oil, vinegar and soy sauce. Toss to coat.

    In a medium bowl, fold the cream cheese and yogurt together until smooth.

    Remove the lefse from the packaging, wrap in a paper towel and microwave on high for 30 seconds until just warmed through.

    Unroll the lefse onto a work surface. Spread an even amount of the cream cheese mixture all the way to the edge on each sheet. Top each with an even layer of the lox followed by an even amount of the cucumber salad.

    Roll each lefse into a log and slice each log into 12 1-inch-wide pinwheels. Transfer to a serving platter. Drizzle the pinwheels with chili crunch and serve.
