Sparkling Grapefruit Vanilla Mocktail

Oooh, this mocktail is refreshing! The tart grapefruit juice is brisk and bracing, and sparkling water adds so many tiny, fizzy bubbles — like a splash of optimism in your glass. A sprig of rosemary gives it layered, complex flavor (and beauty!), and vanilla adds a touch of sweetness. Craving something stronger? Try adding a shot of vodka or Hendricks gin.


With or without spirits, this drink brings a ray of sunshine to gatherings of all types — brunches, happy hours, baby showers, or quiet nights in with your S.O.

Ingredients

  • ¾
    cup freshly squeezed pink grapefruit juice
  • ¾
    ounce freshly squeezed lemon juice
  • ¾
    ounce rosemary-vanilla syrup
  • Ice
  • Splash of sparkling water
  • 1
    rosemary sprig, for garnish
  • 1
    slice pink grapefruit, for garnish

For the rosemary-vanilla syrup:

  • ½
    cup granulated sugar
  • ½
    cup water
  • 3
    rosemary sprigs
  • ½
    teaspoon vanilla extract

Directions

    For the rosemary-vanilla syrup: In a small saucepan over medium heat, combine the sugar, water and rosemary sprigs. Cook for 5 minutes or until simmering, stirring to dissolve the sugar. Stir in the vanilla extract, remove the pot from the heat and let sit for 10 minutes.

    Discard the rosemary sprigs, transfer the rosemary-vanilla syrup to an airtight container and let cool in the refrigerator for 1 hour. The syrup can be stored in the refrigerator for up to 2 weeks.

    To make one mocktail: In a cocktail shaker filled halfway with ice, combine the pink grapefruit juice, lemon juice and rosemary-vanilla syrup. Shake until chilled through.

    Strain the cocktail into a highball glass filled ⅓ of the way with ice. Top with sparkling water.

    Garnish with a rosemary sprig and pink grapefruit slice. Enjoy!
