Serve this easy, tangy dip with baked tortilla chips and crackers or use it as a spread on sandwiches. A delicious way to class up a grilled cheese sandwich! Pairs well with Syrah.

Ingredients

  • 1/4
    cup drained oil-packed sun-dried tomatoes
  • 1/4
    cup chopped drained roasted red bell peppers
  • 1/2
    cup chopped walnuts, toasted
  • 1
    tablespoon chopped shallot
  • 1 1/2
    tablespoons red wine vinegar
  • Salt, to taste
  • Freshly ground black pepper, to taste

    cup olive oil

Directions

    Place tomatoes, bell peppers, walnuts, shallot, vinegar, salt, pepper, olive oil and 2 tablespoons of water in a high-speed blender or food processor.
