Bison Chili

This recipe uses ground bison in place of ground chicken or beef. Bison is often considered “gateway game meat,” and is similar to beef in color, but has a slightly sweeter flavor.

Ingredients

    1-lb. package Fossil Farms ground bison
  • 1
    large yellow onion, diced
  • 4
    cloves garlic, minced
  • 1
    16-oz. can crushed tomatoes
  • 1/4
    cup chipotle pepper paste
  • 2
    tablespoons ground cumin
  • 1
    green bell pepper, diced
  • 1
    red bell pepper, diced
  • 1/2
    cup cilantro, chopped
  • 2
    tablespoons vegetable oil
  • 2
    cups beef stock
  • 1
    bay leaf
  • 2
    sprigs oregano
  • 1
    can red pinto beans
  • Salt, to taste
  • Pepper, to taste
  • Shredded cheese, for garnish (optional)
  • Sliced green onions, for garnish (optional)

Directions

    In a large pot, cook the vegetable oil and minced garlic over medium heat for about 2 minutes, or until softened and fragrant.

    Once heated, add onions and bell peppers, then stir until they caramelize and become semi-translucent, about 5 minutes.

    Add the ground bison into the pot and break up the meat, stirring until cooked through.

    Add crushed tomatoes, chipotle pepper paste, cilantro, oregano and ground cumin and mix through.

    Add the beef stock and season with salt and pepper to taste.

    Bring to a boil, reduce heat to low, cover and simmer for 25-35 minutes.

    About 10 minutes before the chili is done, add the red pinto beans and continue to simmer until they are heated through.

    To serve, top with your favorite chili accoutrement such as shredded cheese, sliced green onions or chopped cilantro.
