Brown Sugar Oatmeal Bites

There’s something so comforting and cozy about the combination of oats, brown sugar, and cinnamon. It brings warmth and fall vibes with every bite, and may even remind you of the oatmeal packets many of us grew up eating.


These Brown Sugar Oatmeal Bites capture that classic oatmeal flavor in a wholesome, snackable form that’s easy to take on the go, and they’re perfect for after-school snacking or packing into lunchboxes. As a parent, I love that they’re wholesome and nutritious, and my kids love that they’re sweet and delicious!


Made with hearty whole grain oats and flour, these bites are lightly sweetened with maple syrup, making them a great option for the whole family. They’re sweet, soft, easy to pack and provide a great boost of energy.


They’ll keep in an airtight container at room temperature for 2-3 days, but they also freeze really well, so I recommend freezing any that you won’t eat in the first two days. Just take them out as needed.

Ingredients

    cups old-fashioned oats
  • ¼
    cup whole wheat flour
  • ¼
    cup packed brown sugar
  • 2
    teaspoons cinnamon
  • 2
    teaspoons baking powder
  • Pinch kosher salt
  • ¼
    cup unsalted butter, melted
  • ½
    cup milk
  • ¼
    cup maple syrup
  • 2
    large eggs
  • 1
    teaspoon vanilla extract

Directions

    Heat oven to 375ºF.

    In a large bowl, stir together the oats, flour, brown sugar, cinnamon, baking powder, and salt.

    In a medium bowl, whisk together the melted butter, milk, maple syrup, eggs, and vanilla. Stir the wet ingredients into the dry ingredients and mix until combined.

    Prepare a mini muffin pan with cooking spray or paper liners. Fill each well with batter all the way to the top and lightly tap down if needed. Bake for 15 to 20 minutes or until cooked through and golden brown.

    Let cool before removing from the pan. Leftovers can be stored in an airtight container at room temperature for up to 5 days.
