Smoked Salmon Thai Quinoa Salad

When you need a delicious, nutrient-dense salad that can feed the whole family (or meal prep for the week), this one is a great choice. With fresh veggies like cabbage, carrots and onion, this salad is brightly colored and filled with fiber. The smoky salmon adds depth to the flavor and protein to the dish. Top with a simple peanut dressing, and you have a salad you can eat for days to come!

Ingredients

1cup tri-color quinoa, cooked according to package instructions

¾cup shelled edamame

¾cup thinly sliced red cabbage

¾cup grated carrot

⅓cup small diced red onion

⅓cup roughly chopped peanuts

½cup spicy peanut sauce, plus more for garnish

1(1 lb.) package L&B Wood-Fire Smoked Salmon Nuggets

1tablespoon Thai sweet chili sauce

¼cup finely chopped cilantro

In a large bowl combine the quinoa, edamame, cabbage, carrot, red onion, peanuts and peanut sauce; mix until well combined.

Flake the salmon across the top of the salad. Garnish with extra peanut sauce, Thai sweet chili sauce and a sprinkle of cilantro. Serve immediately or refrigerate until ready to serve.
