Smoked Salmon Thai Quinoa Salad

Ingredients

    cup tri-color quinoa, cooked according to package instructions
  • ¾
    cup shelled edamame
  • ¾
    cup thinly sliced red cabbage
  • ¾
    cup grated carrot
  • cup small diced red onion
  • cup roughly chopped peanuts
  • ½
    cup spicy peanut sauce, plus more for garnish
  • 1
    (1 lb.) package L&B Wood-Fire Smoked Salmon Nuggets
  • 1
    tablespoon Thai sweet chili sauce
  • ¼
    cup finely chopped cilantro

Directions

    In a large bowl combine the quinoa, edamame, cabbage, carrot, red onion, peanuts and peanut sauce; mix until well combined.

    Flake the salmon across the top of the salad. Garnish with extra peanut sauce, Thai sweet chili sauce and a sprinkle of cilantro. Serve immediately or refrigerate until ready to serve.
