Ingredients

    cups fresh baby spinach

    pint cherry tomatoes

    ounces gorgonzola cheese
  • 1/2
    cup pine nuts, toasted

For the Lemon Vinaigrette:

    medium lemons, juiced
  • 2
    tablespoons Dijon mustard
  • 1
    teaspoon honey
  • 1
    garlic clove, minced
  • 1/4
    cup extra virgin olive oil
  • Salt, to taste
  • Pepper, to taste

Directions

    Make the Lemon Vinaigrette: Whisk the lemon juice, Dijon mustard, honey and garlic in a small bowl. Slowly whisk in the olive oil. Season with salt and pepper to taste.

    Assemble the salad: Place spinach into a large serving bowl; toss with the vinaigrette. Top with the tomatoes, gorgonzola and pine nuts.
