Banana Bars with Cream Cheese Frosting

When you have several bananas that are on the verge of becoming a little too ripe, try these moist, frosted dessert bars! A classic recipe from The Best of Byerly’s cookbook.

Ingredients

  • 1/2
    cup butter, softened
  • 1 1/4
    cups sugar
  • 2
    eggs
  • 1
    teaspoon vanilla extract
  • 1
    cup mashed bananas (2 large bananas)
  • 1
    8-ounce container sour cream
  • 2
    cups flour
  • 1/4
    teaspoon salt
  • 1
    teaspoon baking soda
  • 1
    cup chopped pecans

For the cream cheese frosting:

  • 1
    3-ounce package cream cheese, softened
  • 3
    tablespoons butter, softened
  • 1 1/2
    cups powdered sugar
  • 1
    tablespoon milk
  • 1
    teaspoon vanilla extract

Directions

    Grease and lightly flour a 10×15-inch jelly roll pan.

    Heat oven to 375 F.

    Cream butter and sugar; blend in eggs, vanilla, bananas and sour cream.

    Combine dry ingredients; stir with pecans into creamed mixture just until blended. Spread in prepared pan.

    Bake until bars test done with a wooden pick, about 25 minutes.

    Cool; spread with cream cheese frosting.

    To make the cream cheese frosting: Beat together all ingredients until smooth.
