For the Apple Spice Protein Waffles:

    cup 2% low fat cottage cheese
  • 1
    cup milk
  • ½
    cup avocado oil
  • 1 ½
    cups Bob’s Red Mill Gluten Free Flour
  • ½
    cup vanilla protein powder
  • ¼
    cup packed brown sugar
  • ½
    teaspoon xanthan gum
  • 4
    teaspoons gluten-free baking powder

    teaspoons L&B Apple Pie Spice
  • ¼
    teaspoon salt
  • Whipped cream, for serving
  • Maple syrup, for serving

For the Stewed Apples:

    tablespoon unsalted butter
  • 2
    honeycrisp apples, cored and medium diced
  • 1
    tablespoon packed brown sugar
  • ½
    teaspoon freshly squeezed lemon juice
  • ½
    teaspoon L&B Apple Pie Spice
  • Pinch kosher salt

Directions

    To make the waffles: Heat a waffle iron to medium heat.

    In a blender, combine the eggs, cottage cheese, milk, and oil. Blend on medium speed until smooth.

    In a large bowl, combine the blended ingredients with the gluten free flour, protein powder, brown sugar, xanthan gum, baking powder, apple pie spice, and salt. Whisk until smooth.

    Spray the waffle iron with cooking spray, add 3/4 cup of waffle batter, and cook according to the waffle iron instructions.

    Place the waffle on a cooling rack and repeat step 4 with the remaining batter.
