Ingredients
For the Apple Spice Protein Waffles:

2large eggs

1cup 2% low fat cottage cheese

1cup milk

½cup avocado oil

1 ½cups Bob’s Red Mill Gluten Free Flour

½cup vanilla protein powder
-
¼cup packed brown sugar
-
½teaspoon xanthan gum
-
4teaspoons gluten-free baking powder

2teaspoons L&B Apple Pie Spice

¼teaspoon salt
-
Whipped cream, for serving

Maple syrup, for serving
For the Stewed Apples:

1tablespoon unsalted butter

2honeycrisp apples, cored and medium diced

1tablespoon packed brown sugar
-
½teaspoon freshly squeezed lemon juice

½teaspoon L&B Apple Pie Spice

Pinch kosher salt

To make the waffles: Heat a waffle iron to medium heat.

In a blender, combine the eggs, cottage cheese, milk, and oil. Blend on medium speed until smooth.

In a large bowl, combine the blended ingredients with the gluten free flour, protein powder, brown sugar, xanthan gum, baking powder, apple pie spice, and salt. Whisk until smooth.

Spray the waffle iron with cooking spray, add 3/4 cup of waffle batter, and cook according to the waffle iron instructions.

Place the waffle on a cooling rack and repeat step 4 with the remaining batter.

To make the stewed apples: Meanwhile, in a small skillet, melt the butter over medium heat. Add the apples, sugar, lemon juice, apple pie spice, and salt and cook, tossing occasionally, until softened, 5 minutes.
