Black Forest Clafoutis

This light, chocolaty Black Forest Clafoutis is the perfect summer treat. It’s not too heavy with the brightest pop of cherry for a little fruitiness. The recipe is quick and easy, making it an ideal dessert option when you don’t have a lot of time. Substitute cherries with your favorite berries to make something all your own!

Ingredients

    tablespoon unsalted butter
  • 1
    pound California cherries, pits removed
  • cup all-purpose flour
  • 2
    tablespoons cocoa powder
  • ¼
    teaspoon kosher salt
  • 1
    cup whole milk
  • ½
    cup granulated sugar
  • 3
    large eggs
  • 1
    teaspoon vanilla extract
  • 1
    ounce semi-sweet chocolate bar, roughly chopped
  • 1
    ounce 60% dark chocolate bar, roughly chopped
  • ¼
    cup milk chocolate chips
  • 1
    tablespoon powdered sugar
  • 1
    cup freshly whipped cream, for serving

Directions

    Heat the oven to 400 F and grease a 10-inch oven-safe skillet with butter. Spread the cherries in one even layer. Set aside.

    In a small bowl, whisk together flour, cocoa powder and salt until well combined. Set aside.

    In a blender, combine milk, sugar, eggs and vanilla extract and blend until smooth, about 20 seconds. Add the flour mixture and blend for 5 seconds or until just incorporated.

    Pour the batter over the cherries and evenly sprinkle the chopped chocolate and chocolate chips over the surface.

    Bake until the center is set and the sides have puffed, 25 to 35 minutes. Let cool for 15 minutes. Dust with powdered sugar and serve with whipped cream.
