Kimchi Kraze Elk Burger

Fossil Farms is a pioneer in healthy and sustainable alternatives to conventional red meat. They specialize in providing the highest-quality farm-raised game, game birds, exotic meats and all natural meats in the country.

This recipe uses ground elk in place of ground beef. Fossil Farms’ elk are grass-fed and are never given antibiotics, steroids or hormones. With a similar color, elk tastes like a cross between venison and beef.

Ingredients

  • 1
1-lb. package Fossil Farms Ground Elk
  • 1/2
    teaspoon ground cumin
  • 1/2
    teaspoon salt
  • 1/4
    teaspoon black pepper
  • 1/4
    teaspoon garlic powder
  • 4
    Swiss cheese slices
  • 4
    sesame seeded potato buns
  • 2
    tablespoons butter, softened
  • 1
    head Bibb lettuce
  • 1/2
    cup kimchi
  • 1/2
    teaspoon vegetable oil

Directions

  1. 1

Form the ground elk into four burger patties. Place the patties on a small baking tray and season with salt, black pepper, cumin and garlic powder on both sides.

  2. 2

Heat a grill or skillet over medium-high heat. If using a skillet, lightly oil it to prevent sticking.

  3. 3

Place the burger patties onto the grill or skillet. Cook for about 3-4 minutes on each side, or until cooked medium. During the last minute of cooking, place a slice of Swiss cheese on top of each patty and allow it to melt.

  4. 4

While the burgers are cooking, toast the sesame potato buns either on the grill or in a toaster. Once toasted, spread a thin layer of butter on the cut sides of each bun.

  5. 5

To assemble the burgers, place the burger patties with the melted Swiss cheese on the bottom half of each bun. Then, place a leaf of Bibb lettuce on top of the patty.

  6. 6

Add a generous spoonful of kimchi on top of the lettuce and top with the buns.
