Fossil Farms is a pioneer in healthy and sustainable alternatives to conventional red meat. They specialize in providing the highest-quality farm-raised game, game birds, exotic meats and all natural meats in the country. All their products are grown without antibiotics, steroids or hormones and they are sustainably raised and responsibly harvested.


Humble Beginnings


In 1995, Lance Appelbaum tried game meat for the first time and quickly became enamored. Inspired by that first experience, Lance had a vision to introduce the East Coast to game meat as an alternative to traditional proteins such as beef, pork and chicken. For two years, Lance conducted market research and networked with chefs across the country, while his brother Todd Appelbaum established Roaming Acres Farm in Sussex County, New Jersey and learned how to manage livestock.


The first product Fossil Farms brought to market was ostrich. And while ostrich is an archaic creature, Fossil Farms is actually named for Lance’s father, Steve Appelbaum. As a child, Lance affectionately nicknamed his father “The Fossil” and the rest is history. Steve instilled in his boys three guiding principles that still drive their business today: (1) You don’t have to be the biggest, just the best; (2) Have integrity. Say what you do and do what you say; and (3) Have a lot of fun while you do it!


Sustainability


For 30 years, Fossil Farms has challenged the status quo in the meat industry; always striving to create more access to, and demand for, sustainable and healthy alternatives to conventionally raised meat from factory farms. They take a holistic approach to sustainability that starts with the land itself. Protecting and caring for the land the animals graze on is paramount and this means careful water management and planting and maintaining pastures that are drought tolerant and don’t require excessive irrigation. They work with independently owned farmers and ranchers who adhere to and work to improve upon these important measures.


At Fossil Farms, sustainability also means full utilization of the animal. This is a core practice that’s built into each product line at Fossil Farms. They find outlets for all parts of the animals within their supply chain. Any byproducts that are not appropriate for human consumption are used for leather products, pet products and more.

Now you can experience the diversity of Fossil Farms at home! A selection of all-natural meat and farm-raised game is now available in the meat & seafood department at all Lunds & Byerlys stores. Frozen offerings include duck breast, foie gras, ground bison, ground venison, ground elk, bison or elk stew meat and elk or venison medallions. Plus, look for a variety of bold, flavorful salamis including Wagyu beef black truffle salt tartufo salami, wild boar bourbon & bacon salami, venison & Wagyu beef chorizo salami and more!
