Ingredients

  • 1
1-lb. package Fossil Farms Ground Venison
  • 1/2
    cup breadcrumbs
  • 1/4
    cup grated Parmesan cheese
  • 1
    egg
  • 2
    cloves garlic, minced
  • 1
    teaspoon dried oregano
  • Salt, to taste
  • Pepper, to taste

For the Hot Honey Sauce:

  • 1/2
    cup honey
  • 1/2
cup hot sauce (adjust to your taste)
  • 1
    tablespoon apple cider vinegar
  • 1/2
    tablespoon red pepper flakes (optional)

For the rice bowl and broccoli:

  • 2
cups uncooked white or brown rice
  • 4
    cups broccoli florets
  • 2
    tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 2
    tablespoons sesame seeds, for garnish

Directions

  1. 1

Heat your oven to 350 F. Line a baking sheet with parchment paper.

  2. 2

In a large bowl, combine the ground venison, breadcrumbs, Parmesan cheese, egg, minced garlic, salt, pepper and oregano. Mix until combined well.

  3. 3

Form the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.

  4. 4

Bake the meatballs for 15-20 minutes, or until they are cooked through and browned.

  5. 5

Prepare the Hot Honey Sauce: In a small saucepan, combine the honey, hot sauce, apple cider vinegar and red pepper flakes (if using). Heat over low heat, stirring occasionally, until the sauce is well combined and heated through. Remove from heat and set aside.

  6. 6

Prepare the rice and broccoli: Cook the rice according to package instructions. While the rice is cooking, heat the olive oil in a large skillet over medium heat.

  7. 7

Add the broccoli florets to the skillet, season with salt and pepper, and sauté for 5-7 minutes, or until the broccoli is tender and slightly crisp.

  8. 8

To assemble the bowls, divide the cooked rice evenly among four bowls. Top each bowl with the sauteed broccoli and venison meatballs. Drizzle the hot honey sauce over the meatballs and garnish with sesame seeds.
